MONTASIO

  Montasio is the prince of the friulian cheese: defined, regulated and protected by a special Association (Consorzio) it maintains an unique balance of flavours, which all, however, make reference to the soft and enveloping of the milk taste.
  It has an half–hard paste with numerous small holes, produced at low temperature. 

 The Montasio represents all the Latteria cheese (see the page) from which it has took origin hundreds years ago.
  Whole the great family of the Latteria cheese has in common the special basic taste of this product: delicate at the beginning just made and then, with the passing of the months, more and more intense (in the fotos: 2, 4, 6 months aged Montasio): the unique definition nearer to its taste remains ‘infinite taste’…
  However, whereas every little cheese factory of Friuli gives to the own cheese ‘Latteria’ a different nuance, the friulian Montasio cheese has always the same taste in whole region, thanks to a precise and unchangeable production formula, guaranteed by the DOP Mark (Denominazione di Origine Protetta = Denomination of origin protected/ Registered designation of origin).
